A few months ago my client told me about Swai Fish which I had never tried before. I went to pick up some from the grocery store, but knew I wanted to do something different with it. Something other than frying or frake (baked with batter and taste fried). When I noticed that the fish was longer than tilapia I decided to create Swai Rolls.
The first time I made it I didn’t jerk it. I seasoned it, stuffed it and made the rolls. I’m glad I didn’t because I really had a chance to taste the actual flavor of the fish. It had a masculine taste to it. I know that sounds weird but it did. I’ve heard of people say meat had a wild taste and if that’s what they meant, now I get it.
When I cooked it last week I used a jerk marinade. We were jerking chicken all week and anything else edible. So, here’s what I did. If you’re not crazy about spicy food season your fish with your favorite seasonings and stuff them. The jerk flavor is for those that REALLY like SPICY food.
- Swai Fish (marinated over night in jerk sauce)
- Red Onion
- Red Bell Pepper
- Feta Cheese
- Swiss Cheese
- Jerk Marinade of your choice
- Bamboo Sticks
These are the ingredients that will go inside the fish
Red Bell Pepper
Dice everything up
Saute in skillet
Once tender it’s ready for your next step
Ready to be placed inside your swai fish
Lay your fish out
Place a piece of swiss cheese in the middle
Nice and neat
Place you ingredients you saute in middle as well
Take your Feta Cheese
Pour over top
Begin to roll your fish and if anything falls out push it back in.
Insert Bamboo stick
Lay out in Pyrex pan and place in preheated oven at 350 degrees for approximately 30 – 45 min. If your fish makes too much water pour it off half way during the cooking process and place bake in the oven.
Serve with your favorite side dishes and your good to go. I served ours with Jerk chicken, sweet potatoes, string beans, red beans and rice. Do you or your family like spicy food? I cough, cry and sneeze every time I eat spicy food.
