The Cooking Channel:Turkey Enchiladas


Monday we spent the day visiting family and while over my aunts house she ordered some steak enchiladas from a nearby restaurant.  When it comes to fast food I’m very picky.  However, after tasting her enchiladas I decided to give them a try myself.  With a little tweaking the Enchiladas were a success!

First, I browned 2 packages of ground turkey and added taco seasoning of my choice.

Next, take some corn taco shells and cook them in a skillet (using olive oil) on both sides.  After they’re done place them on paper towel to drain any excess oil.


Preparing Enchiladas

Lay out corn shell


Place taco meat inside


Next add enchilada sauce


Then cheese


Roll enchilada


Place in a (oiled) oven safe pan



Pour more enchilada sauce after all enchiladas are placed oven safe pan and pour mozzarella cheese on top.



Place in a 350 degree preheated oven until cheese melts and serve with more enchilada.sauce on top and sour cream (optional)


I’m so happy I tried them myself and will be making them from now on. Also, since I’m so picky I don’t eat frozen entrees. Simply Delish!

  1. I grew up on enchiladas like this just with ground beef– but your way would be even healthier.

  4. Those really look good! My husband is trying to avoid red meat and that would be a good recipe for him.

  5. Looks great! I make my enchiladas with flour tortillas. I just prefer flour tortillas, to corn. My favorite is shrimp!
