Monday we spent the day visiting family and while over my aunts house she ordered some steak enchiladas from a nearby restaurant. When it comes to fast food I’m very picky. However, after tasting her enchiladas I decided to give them a try myself. With a little tweaking the Enchiladas were a success!
First, I browned 2 packages of ground turkey and added taco seasoning of my choice.
Next, take some corn taco shells and cook them in a skillet (using olive oil) on both sides. After they’re done place them on paper towel to drain any excess oil.
Lay out corn shell
Place taco meat inside
Next add enchilada sauce
Place in a (oiled) oven safe pan
Pour more enchilada sauce after all enchiladas are placed oven safe pan and pour mozzarella cheese on top.
Place in a 350 degree preheated oven until cheese melts and serve with more enchilada.sauce on top and sour cream (optional)
I’m so happy I tried them myself and will be making them from now on. Also, since I’m so picky I don’t eat frozen entrees. Simply Delish!
