The Cooking Channel: Jerk Chicken Baked Potato

 

My husband told me of a place near his job that makes Jerk Baked Potatoes. He said he would bring me one to taste so that I can make some for home. Well, he brought me one home to taste alright. He bought himself one and let me taste it! I mastered this baby on the first try. Not complicated at all.  There’s also a video that corresponds with this recipe Jerk Chicken Baked Potato.

You”ll Need:
Chicken Thighs ( Boiled a large bag think it was about 3lbs. However, I used half to jerk and the other half for taco meat.)
Baking Potatoes
Butter
Nacho Cheese
Sour Cream
Jalapeno Peppers
Tomatoes
Lettuce
Cilantro don’t think it was on there, but added it to ours.
Garlic Chives
Onion Chives

First, boil up your chicken thighs. I boiled mine to speed up the process, but you can grill yours if you like. It’s all up to you.

After I boiled up my chicken I diced it up into small cubes.

I checked a few stores in our area for the jerk seasoning I like to use. Of course I could have whipped up some from scratch, but why? LOL Sometimes we just need to make life simple. Like I was saying there was none in my area and the local store that carried it has since closed down. I was going to the city to take care of some things and decided to check some of their local stores and found what I was looking for and a few more of their products. Some of the products I haven’t tried so I picked those up too.

The sauce I will be using on the chicken is this one here.

After my chicken is cut up into bite size pieces, place it in a pot and add in the jerk sauce. Allow to simmer, turn off stove and let set while we prepare the potatoes.  If you think that the sauce may be too spicy add a bit of water to it.

Next, let’s clean our potatoes.  These are baking potatoes so they’re larger than the average potato.

Once the potatoes are clean, dry them off and coat them with olive oil.  Place them in the oven at 350 degrees for up to 2 hours or until they have cooked thoroughly.

Cut potatoes down the middle and you can use a fork or spoon to stir up the potato.  We want the potato to be nice and creamy on the inside.  Next add a little butter and mix it in.   Now it’s time to top with our toppings.

 

First the nacho cheese and sour cream.

and…. the lettuce, garlic chives, onion chives, jalapeno peppers, tomatoes…..cilantro…

Lastly, serve up the deliciousness!  And ENJOY!

Spinach Basil Souffle – Stonefire Naan Garlic Flatbread

I’m back with another way to enjoy that delicious Stonefire Naan Flatbread.  Today it’s breakfast or brunch and in my house my family loves both.  Some weekends when I’m dragging to make breakfast we end up eating brunch 😉  Today I’m sharing a Spinach Basil Souffle I made last Sunday.

Preheat oven at 350 degrees and the featured flatbread of the day……….. Garlic!

Ingredients:

Stonefire Naan (Garlic)

Non stick oven spray

4 eggs

2 tbs Ricotta Cheese

Seasoning- combine pepper, salt & Goya (green container)  and all combined measure approximately 1 tsp

1 tsp Blue Cheese

1/2 Cup Shredded Cheese

1 Cup chopped spinach

Couple Sprigs of Basil

Red Onion (sorry not measured see pic below)

Starting with your 4 eggs, begin by gradually mixing your eggs, ricotta cheese, seasoning mixture, blue cheese, shredded cheese, chopped spinach and onion. Next, take individual size ovenware.  These are what I used.  They were my Mother-in- law’s and I use them often 🙂  she would be proud.

Spray them thoroughly with non stick spray and place your flatbread inside.

Make sure the flatbread is fitting as snug as possible…. now pour in the egg mixture.

Finally sprinkle additional cheese on top.

Place in the oven for approximately 30 – 45 minutes, when the eggs look fluffy that’s when it’s done.

For added LOVE and AFFECTION I cooked up some turkey bacon and sprinkled it on top. Serve and Enjoy

Turkey & Salami Panini – Stonefire Naan Flatbread

A few months ago I ran across Stonefire Naan Flatbread at Costco.  I can’t remember if they were handing out samples, but let’s just say it jumped in my cart.  Since then, whenever I go to Costco a pack jumps in my cart.

It’s shameful what I do to this flatbread.  Shameful I tell you.  I’ll take a piece and put it in the oven on the racks to warm it up and eat as is, as a snack….  here’s something that isn’t what I consider shameful.

I made myself a pizza one Saturday with some leftover pulled barbecue pork meat and topped it with some feta cheese.

 About a week ago I picked up a container of Italian Beef meat and we didn’t have any Italian bread in the house, so I decided to use the Naan Flatbread.  OMG!  It was amazingly delicious!  The flatbread gave it a new dimension to an Italian Beef sandwich!  I’m sure you think I’m overreacting, but I’m not.  I don’t play when it comes to my food!  This sandwich was the BOMB!!!

The first set of beefs I didn’t dip in the Italian beef juice, but my husband did with his second helping.  He said it was better than the first one.

Last week, I was sent some more of Stonefire Naan Flatbreads.  I wasn’t aware of the different varieties because Costco carried one type.

My head began to spin with ideas and other ways to serve this deliciousness to my family.  One idea was to make my husband a Panini sandwich.

Now about the Panini

Using the Whole grain Flatbread, turkey breast and salami was some of the items that help bring this Panini together.  We don’t have a Panini maker so I used our George Forman Grill, plugged it up while I assembled the sandwich.

Added American cheese to both pieces of flatbread.

Next I added the turkey breast.

On top of the turkey breast I added a layer of Salami.

My husband loves red onions and mushrooms so I added some generously to his sandwich.

This is the sauce I added to the Panini.  It’s spicy and adds a kick to any sandwich, taco…..

After placing the bread on top of the sandwich I brushed both pieces of flatbread with olive oil.

Place the Panini on grill and allowed it to cook for 5 – 10 minutes.

Cut in half and serve.

Another delicious meal and of course my husband was digging it.  This was a large sandwich so my husband took the other half for lunch the following day.  Killed two birds with one Stonefire… LOL pun in ten did  Have you tried any of the different varieties of Stonefire Naan Flatbread?  Stay tuned for my Spinach Basil Souffle using the garlic flatbread.  I put my foot in it 😉

The Cooking Channel: Breakfast Bowl

Breakfast Bowl for Brunch, Oh my!  Every now and then I get to watch the Food Network.  I love getting ideas and inspiration.  Well,  Saturday I think her name is Trisha was making a breakfast bowl with her niece.  Right away I knew it would be a great way for me to add some spice to breakfast.

I used everything that I’d ordinarily use diced potatoes, eggs, turkey bacon and some shredded cheese. 

Hubby harvest some potatoes from the garden and I cooked up everything separately.

When everything was ready I layered them in a dish.

First the diced potatoes (all of the potatoes)

Next some eggs (half of what I cooked and I cooked a total of 8)

Then some bacon (shredded the bacon in pieces and added half of the bacon)

Shredded cheese

Repeated with the rest of the eggs

Added the last of the bacon and the rest of the cheese

It was a hit!
