Blueberry Cheesecake Parfait

Have you ever ate something and thought about how good it would taste with something else? Well, that’s exactly how I came up with this dessert. Since I’ve been couponing, I’ve had the chance to taste products that I probably never would have taste if, I didn’t have a coupon. While eating a package of Belvita Breakfast Biscuits, I thought about how some Activia would have complimented the treat. So, this is what I came up with.

Warning: I have no clue how many calories are in this glass of deliciousness! So, eat at your own risk.

Ingredients Needed:

Activia (Vanilla)

Cheesecake (if you prefer a special brand go for it)

Blueberries & Belvita breakfast biscuits (blueberry)

Choose the perfect glass for the occasion. You’re going to begin to layer your ingredients and depending on your favorites feel free to overload accordingly. (ex. You may prefer more yogurt over cheesecake or vice versa)

Step One:Cut cheesecake in small squares so that the squares will fit in bottom of cup and place them in bottom of cup.

Step Two: Take your Belvita breakfast biscuits and crush them while they’re still in the closed package. Then take biscuit crumbs and sprinkle them over cheesecake and fill in any gaps (approx. 1- 2 tbl spoons).

Step Three: Next layer Activia (2 tbl spoons).

Step Four: Then toss in about 4-5 blueberries (if you’re a lover of blueberries add a few more).

Repeat steps 2 – 4

After you have repeated the steps….take 3 small pieces of cheesecake to place on top, along with a few sprinkles of biscuit crumbs. Allow to chill in the fridge for 45 min. to 1 hr and serve.

Dumpcake Recipe

If I can think of any recipes I’ve stolen from my Mama’s kitchen, this is the first one that comes to mind. To bad stealing her potato salad recipe hasn’t been that easy!

Not only is this scrump-didily-icious! Its easy peasy to make.

Dumpcake Ingredients

2 Cans of Cherries
2 Cans of Crushed Pineapples
1 box of yellow cake mix
1 stick of butter
1 cup of chopped pecans

Preheat oven at 350 degrees

Layering your ingredients in a rectangular pyrex dish (I used my silicone bakeware or use any rectangular bakeware).

First, pour in your cans of cherries.

Next, pour in your cans of crushed pineapples. Make sure you spread all ingredients out neatly

Follow with your yellow cake mix. Now, you will not need the entire box but make sure there’s a nice even layer spread over your crushed pineapples (use a generous amount).

Take your stick of butter & melt it either in the microwave or in a small sauce pan. Pour it on top of the layer of cake mix.

Lastly, take your chopped pecans and spread over top.

Bake it for a 1 hr to a 1hr and 30 min. Allowing the top to become a light golden brown. (Its going to form a crust on top)

Let cool. You can place it in the refrigerator to serve cold and it also taste delicious served with ice cream. I served mine with butter pecan ice cream. (The reason for mine being minus the nuts)
