Hemp Happy Family

While shopping at Costco the other day, I stopped to taste some Hemp seeds they had out for tasting.  I was extremely surprised by the taste.  They have a nutty texture and puts me in the mind of sunflower seeds.  They also have another taste that I still haven’t been able to pinpoint.

After researching online I found out that they are a Super Food and very healthful to many health problems such as: high blood pressure, diabetes & more.  With a suggested intake of 4 tablespoons a day, I went for it.

In mostly all of the dishes and drinks that I’ve added the Hemp Seeds to you can either barley taste them or they add a nutty texture.  Hopefully this bag will last us until my next Costco visit.  However, I will be going this week to pick up a bag for my grandmother and if I think they won’t last, I need to pick us up another bag too.

Easy Chipotle Chicken Recipe

 

 

Here’s a quick and easy dish that doesn’t lack heat nor smokey flavor and only using minimal ingredients.  There are many days that I need a meal that allows me to multitask while I cook.

Ingredients:

8 Chicken Leg Quarters
Salt
Pepper
2 small cans of chipotle peppers or 1 large can
Another thing you’re going to need is a cooking dish that can go from stove top to oven and preferably has a lid.  I’m using my LeCreuset and it’s perfect for this.

Take your cleaned chicken and season generously with salt and pepper on both sides.

Next, add olive oil to the bottom of your pan and allow to heat up.

Make sure the olive oil has evenly distributed throughout your pan before adding your chicken.

Add your chicken laying face down so the skinned side has the opportunity to brown.  Once it has browned to your liking flip over and arrange neatly in your pan.  At this time your going to turn on your oven to 400 degrees.

Once all your chicken is arranged add your chipotle peppers laying them on top of the chicken.

Place top on pan and allow to cook 15 minutes on top of the stove.

Now it’s time to place your chicken in the oven.  I set my timer for 1 hour and 15 minutes.  If you like yours more on the rare side you can lessen the time. However, I like mines DONE! Done! DONE! Once your time is up remove from oven….

And your done!  Falling off the bone GOOD! Perfect for those that enjoy a little smoke and heat.  Another thing I love to do with the chipotle peppers, add them to a Ziploc bag and meat of your choice.  Marinate over night.  Throw on the grill or pop in the oven.  Superb!  Hope you enjoy the heat.

Spinach Basil Souffle – Stonefire Naan Garlic Flatbread

I’m back with another way to enjoy that delicious Stonefire Naan Flatbread.  Today it’s breakfast or brunch and in my house my family loves both.  Some weekends when I’m dragging to make breakfast we end up eating brunch 😉  Today I’m sharing a Spinach Basil Souffle I made last Sunday.

Preheat oven at 350 degrees and the featured flatbread of the day……….. Garlic!

Ingredients:

Stonefire Naan (Garlic)

Non stick oven spray

4 eggs

2 tbs Ricotta Cheese

Seasoning- combine pepper, salt & Goya (green container)  and all combined measure approximately 1 tsp

1 tsp Blue Cheese

1/2 Cup Shredded Cheese

1 Cup chopped spinach

Couple Sprigs of Basil

Red Onion (sorry not measured see pic below)

Starting with your 4 eggs, begin by gradually mixing your eggs, ricotta cheese, seasoning mixture, blue cheese, shredded cheese, chopped spinach and onion. Next, take individual size ovenware.  These are what I used.  They were my Mother-in- law’s and I use them often 🙂  she would be proud.

Spray them thoroughly with non stick spray and place your flatbread inside.

Make sure the flatbread is fitting as snug as possible…. now pour in the egg mixture.

Finally sprinkle additional cheese on top.

Place in the oven for approximately 30 – 45 minutes, when the eggs look fluffy that’s when it’s done.

For added LOVE and AFFECTION I cooked up some turkey bacon and sprinkled it on top. Serve and Enjoy

Help Mama Cook- Classic Twice Baked Potatoes

You all know my husband is a meat and potatoes kind of man.  He’d eat potatoes everyday if, I’d let him.  Nope… I cook them in moderation.  His favorite styles of potatoes are scalloped and diced potatoes. He also loves twice baked and I can’t forget to mention loaded potatoes…

Well, here’s my Classic Twice Baked Potato Recipe. Simple, quick and to the point.   Take this recipe and add your special touch or use as is.

Ingredients:

4 Baked Potatoes
2 tbl spoons butter
2 tbl spoons feta cheese
1 1/4 cup shredded cheese (I used mexican style) you will also need extre cheese to place on top of the potatoes after stuffing them.
1/4 cup ranch dressing
1/2 tsp salt (I use pink Himalayan salt) also feel free to use a bit more to taste or exclude salt all together if you have any health issues.
1/2 tsp pepper

First clean your potatoes.

Take potatoes and poke holes throughout potatoes and place on an oiled oven safe pan.

Place potatoes in a preheated oven at 450 for about an hour and a half.  Use fork to test if potatoes are tender by sticking fork in thickest part of potato.

After removing potatoes from oven cut potatoes in half horizontally. This step I use my fork to hold potatoes in place and to prevent burning myself.

After you’ve cut potatoes in half scoop out insides of potatoes and place insides in a bowl. Place all of the above ingredients in a bowl by adding the butter first so it melts thoroughly and the rest of the ingredients after that and cheese last. Mix well.

Fill potato halfs with potato filling that you have prepared and lastly, sprinkle more cheese on top of potatoes before placing them in oven. Add as much cheese as your heart and butt desires 🙂 Place in 350 degree oven for approximately 30 minutes or until cheese has melted on top.

Remove and serve….with the rest of your meal.
