Move over Frappes! There’s a new drink in my life.

image

In order to cut back on my Frappe intake, I’ll make a smoothie.  Well, I added a new flavor to my arsenal, Pina Colada!!!! Yummy!  We went out to eat a couple weeks ago and I ordered a Pina Colada (virgin).  When I made the smoothie at home my oldest said she didn’t like Pina Coladas until she taste the ones I made the other day.  I’ll post recipe tomorrow.

Help! Mama needs a PMS Emergency Kit

Lately, I’ve been noticing severe mood swings approaching “that time of the month”. I don’t want anyone to talk to me and I’d love for them to stay about 1,000,000 ft away and their sound volume so low that it reaches -0.

I know I’m getting older, I’ll be the big “40″ this year. So, I made a doctor appointment for this week and hopefully I can get some understanding of what’s taking place with my emotional state.

In the mean time I’m thinking of preparing a PMS Emergency Kit….break in state of emergency. Here are some of the things I would need in my kit to give me a sense of emotional stability.

PMS Emergency Kit
1. Restraint Order against every member in my household. At the first signs of PMS I can lock myself in my bedroom and have absolutely no contact with them until I’ve had some meds or feel better.
2. Chocolate, chocolate, chocolate and more chocolate!
3. Caramel Frappe (preferably a machine but I’ll take what I can get.

4. Ice cream and every topping that can be thought of.

5.Laptop, phone and my iPad (to watch my Netflix)

6. Netflix

7. Money. In case they fail to comply with number one, I’d get lost and go spend money.

This is what I came up with so far. What else do you think I should add to my list? Have you experienced any emotional changes in your menstrual cycle at any stage of your life and how did you deal with it?

Apple Muffins Recipe

Cooking tools needed: Blender, measuring cup, measuring spoons,3 large mixing spoons,2 to 3 large mixing bowls, 2 8×4 loaf pans or 1 8×4 loaf pan and a standard muffin pan(for the kids) & cooking spray.

Preparation: preheat on 325 degrees

Tip***bread loaf 45 minutes to 1 hour or until done. Muffins cook quicker than your bread loaf due to the depth of the pan so check on them in 15 to 20 and cook additional time if needed.***

Dry ingredients:
2 cups white sugar
3 cups flour
3 tsp ground cinnamon
1 tsp baking soda
1/4 tsp baking powder
1 tsp salt
Wet ingredients:3 eggs
1 cup vegetable oil
2 cups/1 can of apple pie filling

2 tsp vanilla extract

Preparation:
1. Pour all dry ingredients in a bowl.

2. In another bowl pour in all your wet ingredients.
3. Begin to add you dry ingredients into your wet ingredient slowly while stirring ingredients. (you can use a hand mixer but I’ve been using a spoon to mix. Which ever you prefer. Also, if you want large chunks of apple or smaller, use a potato smasher to control the size of your apples.)
4. Mix all ingredients thoroughly.
5. Spray your pans/muffin pans with your non sticking cooking spray.
6. Pour into cooking pans/muffin.
7. Place in oven and cook bread loaf 45 minutes to 1 hour or until done. Muffins cook quicker than your bread loaf due to the depth of the pan so check on them in 15 to 20 and cook additional time if needed.

Mama Tip: use a fork or skewers to poke in muffins & bread to check if they’re fully cooked. If, fork or skewer come out clean after poking, bread is DONE. If it comes out wet, continue cooking.

Taco Souffle

image

Make last night taco meal into your morning breakfast.

Ingredients:

Leftover taco meat
1 can of grand ( I used honey butter) biscuits
5 eggs
Feta cheese
Shredded cheese

****You will also need a muffin pan and a cookie sheet under your muffin pan because as your biscuits rise you may get some spillage.****

Preparation:

First prepare your eggs.  Take eggs and mix them in a bowl. Season according to your liking as you would usually prepare your eggs for breakfast.  Put them to the side.

Next, open your can of biscuits. Take each biscuit and separate them in half as you would a sandwich. Then place each half of biscuit in your muffin pan.

Put biscuits in oven for 3 to 5 mins. Remove and proceed with the next steps.

Take your eggs and pour on top of your biscuits (try not to let it overflow).
Then take your leftover taco meat and sprinkle on top.

Place in oven and allow to cook.

Once they become golden brown, remove and sprinkle your Feta cheese, shredded cheese and place in oven for no longer than 3 mins.

Serve and enjoy
