The Cooking Channel: 3 Ingredient Chicken Alfredo Recipe (Video)

Here’s a quick 3 Ingredient Dish that will be on your table in 45 minutes and only take 5 minutes to prepare. I served this dish over some Jasmine Rice along with a Caesar Salad. To create this dish you’ll need: (Video embed is also below)

Ingredients:
3 lbs Chicken Thighs (cut in half, strips or cubes. Whichever you prefer)
1 Package of Ranch Salad Mix and Dip
16 oz jar of Alfredo Sauce

Directions: Preheat oven on 350 degrees
Lay chicken in casserole dish side by side and don’t worry if it overlaps.
Next pour jar of Alfredo Sauce on top of chicken. If there’s any chicken exposed that’s fine. We want that.
Open packet of Ranch seasoning and pour half of the pack on top. Make sure to get the seasoning on top of exposed meat too. When done this will create a nice crisp effect on the exposed chicken.
Lastly, place dish in oven on 400 degrees for 45 minutes. When done remove and serve over rice or pasta along with some veggies or a salad.

The Cooking Channel: Porkchop Skillet Dinner for Two (w/Video)

What do you do when you have two leftover pork chops that won’t fit in a pan?  You make Porkchop Skillets for Two.  With Valentine’s Day coming up this will be a great dinner to cook for you and your hubby or significant other.  If you’re not a fan of pork feel free to add your meat preference.

To make this dish you’ll need:

2 Cast Iron Skillets (if you don’t have cast iron skillets feel free to use any skillet or casserole dishes.)

2 Pork Chops

2 Potatoes

1 can cream of mushroom soup

Broccoli Florets

Olive Oil

1 Onion (sliced)

Salt & Pepper

*Preheat oven on 350 degrees*

Instructions:

Season pork chops with salt and pepper on both sides.

Pour a little bit of olive oil into your cast iron skillets.

Next lay your pork chop inside the skillet.

Now we’re going to add in the potato, but first make sure it has been cleaned and coat it lightly with some olive oil.  Next place your potatoes in the skillet next to the pork chop.

Load on the onions!  Well, actually I had a huge onion and I dare to waste it.

What I do when I use cream of mushroom when cooking is… I like to put it in a bowl add water and stir it up.  This keeps it from being so thick and I’m able to spread it on easier.

Pour the cream of mushroom over pork chops and onions.

Cover with foil and place in oven on 400 for 45 minutes.  At 45 minutes take it out the oven to check to make sure potato is tender. If potato is tender add in broccoli, add butter to potato, cover back up and place in oven for 10 to 15 more minutes.

Remove from oven and serve.

The Cooking Channel: Crockpot Lasagna (Video)

Sunday evening we went to see Disney on Ice. The past few Sundays we’ve ordered out because I just didn’t feel like cooking. However, last week we ordered pizza and we weren’t too pleased. So, this Sunday I knew we had to have something delicious, but I also didn’t want to spend much time in the kitchen. To solve both dilemmas I made lasagna and made it in the crockpot.

Years, years, years ago I knew nothing about making lasagna. Not a thing! We ate store bought lasagna. Ewww 🙁 From the first time I made it, I vowed to never, ever, eva…eat store bought lasagna again. I have kept my vow to this day. Another thing I don’t fret about is having the same exact ingredients every time I cook a specific dish. I just don’t. I think oftentimes we spend unnecessary amounts of money on one dish. If I have the staple items I need to make a dish I make it with that and I’m good and the food is good too.

Thanksgiving Dinner 2014

Today was the four of us eating thanksgiving dinner without our oldest.  I cooked mustard greens,  macaroni and cheese,  Cornish hens and dressing.   Pretty much our usual for the holiday.

After a meal like this,  it’s time to curl up on the couch with the family and sleep watch a movie.
