Manicotti Stuffed with Cauliflower & Asparagus



We try to eat at least 2 Veggie meals a week. Preparing Manicotti in a variety of ways has become one of our favorites. Hope you enjoy and always remember to use your creativity and substitute the recipe with ingredients your family will LOVE.

  • Ingredients:
    1 Box Manicotti
    1 Can Asparagus (of course you can use fresh)
    2 eggs
    2 packages shredded cheese
    1 Yellow Bell Pepper
    1 Orange Bell Pepper
    1 Jar of Alfredo Sauce
  • Seasonings:
    Lemon Pepper
    Sea Salt

Preparation of Manicotti:
Boil Manicotti according to the directions on box

Cauliflower-Cut up half of cauliflower ( The other half can be used as a side dish or cut it up as well and include it in the dish)
Asparagus- Rinse well
Yellow & Orange Bell Pepper-Dice into small pieces
In a large skillet pour in 2 tablespoons of Extra Virgin Olive Oil. Allow to get hot and place Cauliflower, Asparagus & Bell Peppers in skillet along with 2 tsp of lemon pepper & 1 tsp of sea salt. Let saute until tender. After it has become nice in tender, pour inside of a large mixing bowl along with 1 bag of shredded cheese & 2 eggs. Let sit to the side until your Manicotti is done.

Stuffing the Manicotti:
In a large Casserole dish, spray some non-stick baking spray. Lay your cooked Manicotti in dish. Next, using a spoon stuff the Manicotti with you Cauliflower Asparagus filling that you have prepared.

After you have stuffed your Manicotti, pour your jar of Alfredo Sauce over the stuffed Manicotti. Next, take you last bag of shredded cheese & spread on top. Place in oven on 400 for 35-45 min. (or until cheese is melted to your desired look)Enjoy
