The Cooking Channel: Butter Teriyaki Brussels Sprouts (Video)

For years I’ve tried to eat Brussels Sprouts and didn’t like them.  I’ve always thought they were so adorable so who wouldn’t want those darling mini me cabbages on their plate for dinner.  Over time and experimenting with different ways to cook them I’ve grown to love them.  Here’s my Butter Teriyaki Brussels Sprouts Recipe.  Extremely simple to make and very few ingredients.

This recipe calls for 1 lb brussels sprouts, 3 tablespoons of butter, pepper & 1/3 to a 1/2 cup of Teriyaki marinade sauce.  Watch video for step by step instructions.

The Cooking Channel:Shrimp & Lobster Rigatoni

 

 

 

Have you ever saw a picture of food on Instagram, Pinterest, Facebook etc and new you had to have it?  Well, what had happened was……  The Posh Blog posted a picture of some Lobster Mac & Cheese on Instagram and I had to have some.  I began to think about how I could make it happen.  I was suppose to cook it on Mother’s Day, but I bullied my husband into cooking a dish he wanted to cook instead.

This is how it went down.
I picked up 4 lobster tails from Jewel for $4.99 each and everything else used was what I had on hand.

Ingredients
1 lb bag Rigatoni Noodle
4 Lobster Tails
1 lb Raw Shrimp (1 bag)
1 Stick Unsalted Butter (1 half while making pasta & other half melted over the top)
3 Cups Colby Jack Cheese
3 Cups Italian Mozzarella Cheese
1/2 cup milk
3 oz Philadelphia Cream Cheese
Salt (or seasons of preference)
Old Bay Seasoning
Lemon Pepper
1 tsp sugar

Garlic Chives (Fresh pinched a few off)

Cilantro (Fresh pinched a few off the bunch)

Cook and prepare rigatoni, lobster and shrimp all separately before you combine the entire dish.

Mix cooked Lobster & Shrimp, 3 Cups of Colby Jack Cheese, 1/2 stick butter, 1/2 cup milk, 3 oz Philadelphia Cream Cheese, All Seasonings, Chopped Garlic Chive and Chopped Cilantro all in a large bowl together.

Lastly, Mix in cooked  Rigatoni.

Pour all in a large Pyrex Dish.  Sprinkle the 3 cups of Italian Mozzarella Cheese over top (Feel free to use less). Melt the other half of butter and drizzle it on top.

Preheat oven on 350 degrees and cook for approximately 30 minutes.  You can use the last 5 minutes to brown the top if you desire by putting the oven setting on broil.

The Cooking Channel: Salmon Tacos w/MexAmerica Tortillas(Product Review)

A couple weeks ago I received some taco shells from MexAmerica Foods
to review.  I was sent 1 pack of 15 oz Flour Tortillas, 16 oz 100 % Whole Wheat With Honey Tortillas & 10 oz corn Tortillas.

Within the past couple weeks we’ve had our regular turkey tacos & veggie wraps.  I used the leftovers for my husband’s lunch using the 16 oz Whole Wheat With Honey Tortillas and he said the guys at work were eyeing his food.  The Whole Wheat With Honey Tortilla shells are very large and a great proportion for a man’s meal.

Since we eat tacos often in my house I also wanted to do something a bit different.  I decided on Salmon tacos using the 15 oz. flour shells.

Here’s a quick tip and as brilliant as I am I can’t take any credit.  My Mom showed me this little trick when she was over one day and I’ve been cooking my shells like this ever since.

Tip: Put taco shells directly on the gas stove burner on a medium fire, cook for approximately 15 seconds and flip over. Continue flipping if necessary to get the desired look of your shells.

First, season your salmon with the seasonings you prefer, lightly oil skillet with olive oil and cook.

After salmon is done cut salmon into small pieces and begin to prepare your taco.

If you choose to use the avocado cut it up as well.

Layer salmon, romaine lettuce, shredded cheese, avocado and Greek yogurt.  If you’re a hot sauce person make sure you add that too.  The MexAmerica Tortilla shells were delicious!  My family and I enjoyed trying them out.
