Monthly Recipe Swap with Momma Young at Home: Chicken, Kale & Broccoli

If you haven’t been over to mommayoungathome.com make sure you check out her lovely blog where she shares home, family, crafts an you guessed it FOOD!  If i’m not mistaking I met Anjanette a couple years ago through her blog and social media.  It usually takes me a minute to click with people, but with Anj it was instant.  She’s a wonderful wife, mom, blogger and one I can consider a blog friend.

Let me first start off by saying that my first encounter with Kale wasn’t a good one.  I used it in a smoothie a couple summers ago and wasn’t impressed.  When Anj had it in her recipe I put aside all fears and was excited about trying it a different way.  This is what you’ll need for the recipe. At the end I added more kale, soy sauce, chicken broth and some cornstarch and water to thicken up my sauce.

Ingredients:
1 tbsp Oil (I used olive oil)
Recipe called for chicken cutlets I used 4-5 chicken breast and cut them in half.
1/2 Cup diced red pepper
1/4 teaspoon Garlic Salt
1/8 teaspoon Pepper
2 tbsp low salt soy sauce ( at the end I added more)
1 cup broccoli (cut small and lightly steamed)
4 kale leaves sliced ( I added more Kale later because it was too good)

 

Directions:
In oil brown chicken.

before chicken is completely cooked add red pepper,  garlic salt, pepper, soy and simmer.

Add Broccoli and cut Kale.

Cover and let simmer for for 3 more minutes max.

Possible Suggestions.   Wisk a teaspoon of cornstarch to chicken stock and add to mixture for a thickening sauce.  Plate over rice or quinoa.

I did use Anj’s possible suggestions by adding chicken broth and the cornstarch.  What I did was add the rest of my kale (chopped) to the skillet, added more soy (be careful not to add too much) and in a separate bowl I mixed about 2-3 tablespoons of cornstarch, cold water and mixed it until smooth.

Then pour it in skillet, stir and let simmer until the rest of the kale is tender.  I plated it over a bed of pasta.

This was so delicious!!!! I’m so glad I gave kale another try and can’t wait to pick up more when I go to the grocery store.  It was so funny because while I was cooking the smell and aroma was so good.  Felt like I was in Anjanette’s kitchen. LOL

After 2 weeks since my daughter was injured during a basketball game, she has fully recovered from her concussion and has been OK’d to return to play.  We went to see the specialist again on Tuesday and everything looked great. This is definitely good news & we are thankful to God for this experience as well her healing.  Watch the few clips below of her first game back.  One more thing before I let you all go.  I’m linking up with Diaries of a Grumpy Grateful Mom’s, Good News linky.  She has started a Friday linky on sharing our Good News.  Be sure to stop by and/or link up.
