Mama Minute: Leftover Soup

Back in the day when I was living home with my mama, I had a friend over while my mom was about to cook dinner.When I looked in the fridge there was nothing in the fridge. NOTHING!My mama started pulling stuff out and throwing it in a pot.My friend looked at me like what is she doing throwing all that stuff in there. Ugh!My mama made soup and my friend never stopped talking about it.She would always ask,

Did your mama make some more soup?

Who would have thought some so delicious came from absolutely nothing.

Well, this weekend while cleaning out the fridge I found some food that I wasn’t willing to part with yet. Hubby cooked dinner this week and there was leftover stuffed chicken and diced potatoes from that meal. Also, there were some leftover mashed potatoes and corn on the cob from one of the meals I cooked. I chopped up the chicken, removed the corn from the cob and threw it in the crock pot. Threw in about 1 to 2 cups of water and a big’ole tablespoon of Better than Bouillon flavoring and let it cook on high for about an hour.

Making soups in my house is something I do frequently.One of the reason I make soup often, is so that my husband can take it to work with him in the morning and have it with his muffins/bread and coffee. The Leftover Soup I made from the leftovers in fridge was exactly what my husband is taking with him this week.

Before you toss the leftovers in the fridge, try using it to make some Leftover Soup. If you don’t own a crock pot, toss it in a pot and cook it on simmer for about an hour.

The next thing I did was put the soup in some small storage containers to go.You can use your soup for now or place it in the fridge for future consumption.

Easy Chipotle Chicken Recipe

 

 

Here’s a quick and easy dish that doesn’t lack heat nor smokey flavor and only using minimal ingredients.  There are many days that I need a meal that allows me to multitask while I cook.

Ingredients:

8 Chicken Leg Quarters
Salt
Pepper
2 small cans of chipotle peppers or 1 large can
Another thing you’re going to need is a cooking dish that can go from stove top to oven and preferably has a lid.  I’m using my LeCreuset and it’s perfect for this.

Take your cleaned chicken and season generously with salt and pepper on both sides.

Next, add olive oil to the bottom of your pan and allow to heat up.

Make sure the olive oil has evenly distributed throughout your pan before adding your chicken.

Add your chicken laying face down so the skinned side has the opportunity to brown.  Once it has browned to your liking flip over and arrange neatly in your pan.  At this time your going to turn on your oven to 400 degrees.

Once all your chicken is arranged add your chipotle peppers laying them on top of the chicken.

Place top on pan and allow to cook 15 minutes on top of the stove.

Now it’s time to place your chicken in the oven.  I set my timer for 1 hour and 15 minutes.  If you like yours more on the rare side you can lessen the time. However, I like mines DONE! Done! DONE! Once your time is up remove from oven….

And your done!  Falling off the bone GOOD! Perfect for those that enjoy a little smoke and heat.  Another thing I love to do with the chipotle peppers, add them to a Ziploc bag and meat of your choice.  Marinate over night.  Throw on the grill or pop in the oven.  Superb!  Hope you enjoy the heat.

The Cooking Channel:Shrimp & Lobster Rigatoni

 

 

 

Have you ever saw a picture of food on Instagram, Pinterest, Facebook etc and new you had to have it?  Well, what had happened was……  The Posh Blog posted a picture of some Lobster Mac & Cheese on Instagram and I had to have some.  I began to think about how I could make it happen.  I was suppose to cook it on Mother’s Day, but I bullied my husband into cooking a dish he wanted to cook instead.

This is how it went down.
I picked up 4 lobster tails from Jewel for $4.99 each and everything else used was what I had on hand.

Ingredients
1 lb bag Rigatoni Noodle
4 Lobster Tails
1 lb Raw Shrimp (1 bag)
1 Stick Unsalted Butter (1 half while making pasta & other half melted over the top)
3 Cups Colby Jack Cheese
3 Cups Italian Mozzarella Cheese
1/2 cup milk
3 oz Philadelphia Cream Cheese
Salt (or seasons of preference)
Old Bay Seasoning
Lemon Pepper
1 tsp sugar

Garlic Chives (Fresh pinched a few off)

Cilantro (Fresh pinched a few off the bunch)

Cook and prepare rigatoni, lobster and shrimp all separately before you combine the entire dish.

Mix cooked Lobster & Shrimp, 3 Cups of Colby Jack Cheese, 1/2 stick butter, 1/2 cup milk, 3 oz Philadelphia Cream Cheese, All Seasonings, Chopped Garlic Chive and Chopped Cilantro all in a large bowl together.

Lastly, Mix in cooked  Rigatoni.

Pour all in a large Pyrex Dish.  Sprinkle the 3 cups of Italian Mozzarella Cheese over top (Feel free to use less). Melt the other half of butter and drizzle it on top.

Preheat oven on 350 degrees and cook for approximately 30 minutes.  You can use the last 5 minutes to brown the top if you desire by putting the oven setting on broil.
