Cooking cornbread & mixing up dressing in my Vintage Pyrex Primary Yellow 404

I knew I wasn’t making enough dressing for thanksgiving even though I doubled my cornbread batch, next time I’ll be sure to multiply it by 4. My husband wanted more dressing so this Sunday I made up another batch.   This was great because I wanted to make sure we finished up all the leftovers.   We did get a break on Saturday because I made tacos.  Trust me if I hadn’t mixed the taco meal in, they definitely wouldn’t have jumped for joy over Sunday’s dinner. 

Y’all know I’m a pyrex junkie.  I absolutely love my pyrex.   The best part about loving my pyrex,  I use my pyrex. Faithfully.   While mixing up my batch of cornbread in the mixing bowl I wanted to try cooking in it too.

Since this was my first time I did pour the cornbread mix into another bowl.  Which was my primary yellow 404.  I mixed it in the 404 Spring Blossom and with it being one of my favorites I didn’t want to risk it.  So, I poured it in my yellow primary and popped it in the oven on 350°.

Since I didn’t set a timer I can’t tell you how long it cooked.  What I did do was…  after browning I used a skewer to poke it in the center to test it.

The skewer came out clean and I allowed it to cool before mixing up my dressing.  The coolest part about this was after the cornbread cooled, I didn’t have to get another mixing bowl.  I mixed it in the same bowl after crumbling up the cornbread.

Once everything was mixed I poured it into another pyrex dish to place in the oven.

I have no idea why no haven’t don’t this before.   All of the Vintage pyrex dishes are made out of the same material.  However,  I associated mixing bowl for mixing and casserole with oven.  Hmmm… I may be making cornbread again tomorrow ;).

Spice up that Jiffy Corn Muffin Mix

We grew up on this stuff and with the hustle and bustle of life, there are times you need some help in the kitchen.

I don’t favor many boxed foods and have recently streamed down can goods to fresh produce mostly.  However, there are days you’d like to get in the kitchen and get out. 

We’re experiencing another Polar Vortex and tomorrow will be day two of school cancelled due to weather.  Making some soup for the soul was a necessity ( recipe post coming).  Made some more Chicken & Acorn Squash Soup and had to please my meat and potatoes man. So, I whipped up a batch of cornbread.  You know I love throwing a twist on my meals.

Directions
2 boxes of Jiffy Corn Muffin Mix + 2 eggs + 1 can enchilada sauce mixed well.

Oil skillet with olive oil and place in oven to heat up a bit. Pour in batter and place in oven until done.

This cornbread didn’t stand a chance!
